I Heart My New Trainer and Other Details
I have been sick for three days in a row. IN A ROW. I am sick to the point that I busted out the prescription meds to bust through the sinus problems that have been plaguing me since Sunday. I think I've taken more meds in the past 48 hours than I've taken in forever but I am happy to report that as of right now I am in 100 MILLION times better shape than I was last night. No joke, last night was just horrendous with the sinus pain. Not surprisingly, I haven't seen the inside of the gym and had to cancel my appointment with my trainer. But this is how awesome he is: when I called him last night to cancel for this morning's session, he went through a litany of things I could do to get better. And while it might not seem like such a huge deal, I appreciated how he took a few minutes to impart some wisdom onto me. I realize I'm paying him but whatever. Tomorrow I'm back in the gym for the treadmill class. I'm not going to overexert myself but I'm not going to cop out and be a wuss, either. If I skip the class when I know damn well I can go at a pace that is comfortable to me without hurting myself I'm only setting myself up for failure. I know my patterns and habits. Also -- how much do I love you guys? But honestly -- the "why do you all read me" was purely rhetorical. I appreciate the kind words, just the same. Sweet, sweet, sweet. Promise I'll do a better job at keeping Lose The Buddha from now on. I made a WW-version of Shepard's Pie Monday afternoon because I was bored out of my skull. I hate being sick more than anything -- I actually did work today from my office at home -- and have been trying everything I can do keep myself occupied. So I cooked. It was wonderful. Here is the recipe after the jump, plus SPOILER INFO on The Biggest Loser. Shepherd's Pie POINTS® Value | 4 1 serving cooking spray (5 one-second sprays per serving) Instructions 1. Preheat oven to 375F. Coat an 8 1/2 X 11-inch baking dish with cooking spray. 2. Place potatoes in a large pot and fill with just enough water to cover potatoes. Boil until potatoes are tender, about 20 minutes. Drain potatoes and place back in pot. Add 2 teaspoons of oil, milk, 1/4 cup of cheese, and salt and pepper to taste. Mash until fluffy; set aside. [I think it's worth noting that you can totally use instant mashed potatoes if you're in a pinch. Also? I use vanilla soy milk.] 3. Meanwhile, heat a large skillet over medium-high heat. Add remaining tablespoon of oil and heat until sizzling. Add onion and turkey, and cook until meat is no longer pink, stirring occasionally, about 10 minutes; drain off any fat. Stir in squash, undrained tomatoes, tomato paste and 1/4 teaspoon of black pepper; bring to a boil. 4. Spoon turkey mixture into baking dish. Spread potato mixture over top of turkey mixture, covering it completely. Sprinkle with remaining 1/2 cup of cheese and bake until potato mixture is golden brown, about 30 minutes. Let stand 5 minutes before slicing into 8 pieces. Biggest Loser: God I am just so not into this group. I think they fucked up by pitting the sexes against each other because you knew there was no way the women would ever beat the men, percentage calculations or not. Also? Matt? SHUT IT. You are irritating me with your tears. Are you from Iowa or what? Posted by Erin at 09:58 PM | filed under: Random commentsHope you feel completely better soon. Thanks for the recipe - I am kind of vaguely collecting healthy recipes with meat in them against when I get married. The boy isn't vegetarian and although he is an excellent cook (in fact way more domestic than I am in every way), it doesn't seem fair to make him do it all. What's a treadmill class? I have difficulty envisaging how the machines would fit with a class setting... posted by: Kirsten at October 19, 2005 05:53 AM Hi Erin. Thanks for posting your weight loss struggles and other good stuff. Your blog really helps me know that I am not alone in my weight loss struggle. I'm in "recipe freak" mode as an attempt to ready myself for the holiday food feast. posted by: nicole-afw at October 19, 2005 09:46 AM |

Glad you are feeling better. Good for you for still planning to make it to your treadmill class. Day 2 on WW. People at work were baking cookies in a toaster oven today. They smelled wonderful, but I stayed away.
I hate the struggle, but I have spent so much time not having things because "I am on a diet" only to blow it later. I'm tired of always being on a diet and plan to do it once and for all. Sure I will always need to control my eating, but I am done with being at this weight. It helps to read your site to know you and others have the same struggle.
A word to Amy - congrats on your weight lose and good luck on the 1/2. Both are amazing accomplishments!
